But back to baking – those recipes that are the most deceptive in the most delightful way can be your saving grace. You know the ones where it looks like you spend days preparing, but really it was a quick put together? Well this is one of those.

Biscotti- dressed to impress those teachers, neighbours and any last minute peeps that decide to give you a gift this year (Oh, really you shouldn’t have…., Here have a biscotti!). No seriously take the biscotti, I insist.
Don’t worry the recipe makes enough to give some away and stash a few for your own little celebrations at home. My plans are to grab some loaded nog, a Christmas special and cozy on up to the glow of the tree while nibbling away.

Fruit filled and chocolate covered sweetness that is perfect for gift giving or snuggling up on the couch.
- 1/2 cup butter room temperature
- 2 cups sugar
- 4 eggs room temperature
- 1 1/2 tsp lemon zest
- 1/2 tsp vanilla
- 5 cups flour
- 2 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 1 1/2 cup candied fruit mix chopped
- 1/2 cup candied citrus peel chopped
- 1/2 cup candied cherries chopped
- 1/4 cup currants
- 3/4 cup raisins
- 1/4 cup golden raisins
- 4 cups white chocolate wafers
- 1/4 cup course sugar
Preheat oven to 325 degrees and prepare 2 banking sheets by lining them with parchment paper.
In a stand mixer, beat the butter until cream. Slowly add in the sugar until combined & fluffy. Add in eggs one at a time. Add in the lemon zest & vanilla until mixed well.
In a separate bowl whisk together the flour, baking soda, baking powder & salt. Add the flour mix to the butter mixture until just combined. Add 3/4 cups of candied fruit mix, all of the citrus peel, candied cherries, currants & both raisins until mixed through.
Divide the dough into 2 & shape each portion into a 2 inch log. Place on the parchment paper lined baking sheets. Flatten the logs slightly. Bake for 30 to 35 minutes or until golden brown.

Bake for 10 minutes longer. Remove from the oven & flip to the over so the other cut side is facing down. Bake for an additional 10 minutes. Remove from oven and cool completely on wire racks.
In a double boiler, melt the white chocolate wafers. Spoon over 1/3 of the end of each of the biscotti cookies. Before the chocolate sets, top with the remaining fruit mix and course sugar for garnish. Let the chocolate on the prepared cookies set before storing or serving.
