Lilac Blackberry Gimlet

This is not your Grandma’s gimlet. Old fashioned, I don’t think so.

There is nothing wrong with a little throwback to the golden age of cocktails. I am happy to see the revival of the superstar mixologist. You know, the ones who can sling any quirky named drink on the menu list (or better yet off the list).

The right combination of sweet, tart and bitter make all the world of difference. The science that goes into a great libation is one of wonderment.

Not only does the aroma need to pull you in (think of those ones served in an encased glass of smoke or finished off with a thick slice of orange zest with it’s oils sprayed over an open flame). It’s the little things that make it big.

Another thing to consider is the layers of the drink that take into account the density of the alcohol, mix and the likes. Ribbons of colour presented before you like a rainbow.

And don’t forget the garnish! The more that can be piled on a wooden skewer the better. Am I right?

You may be thinking, ‘That’s great! Sounds amazing if I was some trendy bearded (most seem to be now a days) Maverick behind the bar with arms of steel that can shake cocktails all night long until the lights come up and people are being ushered out the doors’. Whoa. Now that was a bit descriptive and based on some of my own personal experiences. All good I may add.

But who am I kidding. All I want is a classy but modern cocktail that is easy to make and enjoy. Plus maybe impress my guests. We are not living in the days when a simple gin and tonic will bring the ooohs and ahhhs that it used to. As much as I enjoy visiting them, gastro pubs and on trend cocktail bars have kind of ruined that for now.

So what is someone to do? No beard. No arms of steel. No classes on slinging fancy cocktails. You go back to the beginning. The humble beginning and make it your own. Add in local in-season ingredients and the fun part: test, test, taste and test.

The inspiration for my concoction came from The lilac blooms in the backyard. They were begging to be used as their delicate and floral aroma filled the air. I heard them calling me this year just as they did the previous when I made the lilac lemon shortbread cookies (which I may add are heavenly). The colour tones of the blossoms balance nicely with the blackberries and the fruity floral notes play a pretty tune on the palette.

The colour is fresh and romantic. The gin adds depth. The lime freshens and balances the sweetness.

So cheers to whatever you may or may not be celebrating and go ahead, grab the silver bullet shaker and get an arm workout.

Lilac Blackberry Gimlet

This sophisticated modern gimlet is fresh and easy to make.


    Lilac Simple Syrup
  • 1 cup of water
  • 1 cup of sugar
  • 1 cup of fresh lilac blossoms, cleaned
  • 3 fresh blackberries
  • Lilac Blackberry Gimlet
  • 2 ounces dry gin
  • 1 lime, juiced
  • 1 ounce lilac simple syrup
  • 6 blackberries
  • *additional blackberries and lilac blossoms to garnish
  • club soda


    Lilac Simple Syrup
  1. In a medium saucepan combine the water, sugar and lilac blossoms. Bring to a boil, stirring until the sugar has dissolved. Add the blackberry break them apart with a wooden spoon until the colour has released. Reduce heat and simmer for 10 minutes. Remove from heat and let cool. Strain into a glass jar with a lid. Store in the refrigerator until ready to use.
  2. Lilac Blackberry Gimlet
  3. Fill a cocktail shaker half way with ice. Pour the gin, lime juice, lilac simple syrup and blackberries. Shake until the mixture is cold. Importantly, double strain into a chilled cocktail glass to ensure not blackberry seeds are in the drink. Top with club soda and garnish with some additional blackberries and or lilac blossoms. Serve immediately.


*must be legal drinking age to enjoy this cocktail. Store unused lilac simple syrup in the refrigerator.
