Sweet Honey Bundt Cake

There is nothing more rewarding than coming across an old vintage find and customizing it to make it into your very own.


I was lucky enough to come across a vintage tin cake carrier. They are hard to come across in relatively good condition so it was of course snatched up into my possession. Oh the possibilities of how to make it one of a kind, reflect my personality and keep homage to it’s vintage roots. At first glance it was nothing really to write home about. The faux wood paneling style and the dark brown exterior we less to be desired. The bones were good and the potential was there.

My name, Melissa meaning honey bee in Greek. Not that I am Greek, but I have always been drawn to this magical creature with wings. It is even incorporated into my tattoo collage.

Without a doubt, the main color would be butter yellow. A soft delicate shade that welcomes any delicious baked goods for it to hold. The stenciling and interior would be a warm inviting shimmery gold that adds a bit of drama. My initial would be front and centre, as I also share the same one with my Hubby and daughter. Maybe it might be hers one day?

So the DIY project evolved over a couple of days to allow ample time for the coats of paint to set properly as this was one finished  carrier that was going to last a life time. It was fun watching the evolution of it change from dismal to fabulous. I could not be happier with the final results.

Now that is was complete it was only fitting that the first big bake that it held was a honey bundt cake. How fitting!

This recipe will blow you away with the sweet syrupy honey and the crisp tang of the lemon. It is most definitely a crowd favourite fitting for any guests you host. The hard part will be sharing another slice.

Sweet Honey Bundt Cake

Sweet Honey Bundt Cake

This sweet as honey bundt cake will surely be the treat you are craving.

Ingredients

    Bundt Cake
  • 1 1/2 cup honey
  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 4 eggs, separated
  • 3 cups flour
  • 2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1/4 tsp salt
  • 1 cup sour cream
  • Honey Syrup Glaze
  • 2/3 cup honey
  • 1/4 cup brown sugar
  • 1/3 cup butter
  • 1 tsp vanilla
  • 1 lemon, juiced and zested

Instructions

    Bundt Cake
  1. Preheat oven to 325 degrees. Prepare the bundt pan by spraying with oil and then lightly flour.
  2. Cream together the butter and sugar. Blend in the egg yolk, one at a time until it is light and fluffy.
  3. Stir in the honey and vanilla.
  4. In separate bowl, sift flour, baking soda, baking powder, cinnamon, and salt. Add all dry ingredients to the first mixture and blend.
  5. Add sour cream and blend in.
  6. In a separate bowl, beat the egg whites until stiff peaks appear and then fold it into the batter.
  7. Pour the batter into the prepared budnt pant and cook for approximately 1 hour or until toothpick inserted into the middle of the cake has come out clean.
  8. Cool on wire rack and remove from cake pan.
  9. Honey Syrup Glaze
  10. Melt butter in a sauce pan over medium/high heat. Add remaining ingredients until combined. Remove from heat and let stand to cool.
  11. Pour over cooled honey bundt cake before serving.

    That cake carrier…..WOW! You did an amazing job! A side note- my family is third generation auctioneers and I have worked 1000’s of auction sales, many of them with antiques. I can honestly say I have never seen one before but boy do I want one now. What a find you have there!

    Now that cake looks so good! It is too hot to bake today but I am definitely putting this on my to make list. The cake and glaze both sound just wonderful!

    • Thanks! I was pretty excited to come across the carrier. It is a bit of a rare find these days.
      As luck would have it the main body was in pretty good shape. It just needed some love. I love the idea of taking something old and making it your own.
      The honey cake glaze is amazing as it really brings out the flavour of the cake.
