Greek Style Salad with Feta Cheese

I don’t know about you, but I crave salads when the temperatures outside creep up and the sun beats down. There is nothing like the crispness and freshness of a great salad side dish.


Generally salads are easy to prepare and are a wonderful accompaniment to the main stars of the show. They cut the denseness of the meal with their generally light nature. They cleanse our palette before, after and during a meal to what ever placement you prefer.

A Greek style salad was in order with Greek ribs and lemon potatoes already on the menu. When in Rome… wait, wrong country! Okay, I will say let’s just stick with the Greek style theme over all.

This salad is simple to make, but adds all the elements you may want in a salad. Sprightly dressing with a dash of balsamic vinegar, crunchy cucumbers and bell peppers along with the vital feta cheese that seems to disappear faster then any of the other salad element.

All the ingredients can be prepared ahead of time and set in the refrigerator with exception to the dressing (olive oil, vinegar and lemon juice) as they will break down your crisp vegetables into a fine mushy mess. It is easy enough to add the dressing and give it a generous toss just prior to serving. Every dinner guest wants to see a little showmanship of your talents so save the salad mixing for pre-dinner cocktail time.

If you need to increase the entertainment value of tossing the greens, try adding FIRE! No just kidding. Don’t do that. Save that for the circus or those pre-dinner cocktails! Flaming Sambucas anyone? Enjoy.

Greek Style Salad with Feta Cheese

Fresh Greek style salad will be the welcoming partner to your meal.

Ingredients

  • 1 orange bell pepper chopped into larger pieces
  • 1 English cucumber chopped into larger pieces
  • 1 cup tomatoes chopped into larger pieces
  • 1/2 red onion chopped into medium pieces
  • 1 cup of feta cubed
  • 1 tsp dried oregano
  • 1/2 tsp dried rosemary
  • 1 tsp dried thyme
  • 2 tbsp lemon juice
  • 1/4 cup olive oil
  • 1 tsp balsamic vinegar

Instructions

  1. Combine bell pepper, cucumber, tomato, onion, feta and spices in serving bowl.
  2. Add lemon juice, olive oil and balsamic vinegar just prior to serving.
